When I found out about the Raw Ice Cream sandwich challenge and here, (by Lisa and Nicole) I certainly felt challenged.  I didn’t have a lot of time to adapt my known raw vegan ice cream recipes for ice cream sandwiches considered I had never made a raw cookie and didn’t know of a recipe that didn’t require a dehydrator.

So my ice cream sandwich entry isn’t stunning but the it was quick easy and delicious!  I would abosolutely recommend improving it and getting better pictures of it in the future.

Recipe: Raw Chocolate Cookie

Summary: A great quick and easy recipe that does not require a dehydrator Adapted from: Spiderweb Double Chocolate Cookies

Ingredients

  • 1 cup raw almonds
  • 1 cup dates (pitted)
  • 3 tbsp raw cocoa powder
  • 1 tsp vanilla extract
  • 1/4 tsp cinnamon powder

Instructions

  1. Place ingredients into food processor
  2. Process until a ball of dough forms
  3. Split dough into 16 small balls
  4. Form cookies from small balls
  5. Place cookies in freezer while making ice cream

Preparation time: 15 minute(s)

Diet type: Vegan

Diet tags: Gluten free, Raw

Number of servings (yield): 8

Recipe: Raw vegan blackberry ice cream

Summary: Do not over process ice cream Adapted from: Raw Strawberry Mint Soft Serve

Ingredients

  • 10 whole frozen blackberries
  • 1 whole frozen banana
  • 1 tsp vanilla

Instructions

  1. Place ingredients in a food processor, process until consistency of ice cream. (this will look like a big ball in the food processor.

Preparation time: 5 minute(s)

Diet type: Vegan

Diet tags: Gluten free, Raw

Number of servings (yield): 8

Assembly

  1. Place ice cream between two cookies.
  2. Place sandwiches in freezer immediately.  Do not leave in freezer long though.

Cookies do form a fantastic ball of dough.

This dough is then formed into cookies.

Make ice cream sandwiches using a heaping tablespoon of ice cream in between two raw cookies.

Not ideally pretty, but yummy as as anything! Chocolate and blackberries for the win.

    These look amazing! I was thinking of making them for a cookie contest my company holds every year for the holidays. I noticed that you say you don’t want to leave them in the freezer long… Would you put them in the fridge after they’re done freezing? I’m curious about how long they need to freeze/what you do with them after because the cookies I make will have to sit out for an hour or more before they are judged for the contest and I was wondering if they will hold up at room temp or if they will be okay with just ice or if I would need to do an ice/dry ice combo to keep them frozen.

    You don’t need to feel ashamed of those photos at all. I like them a lot. You can easily remove all those comments about the photos not being all that great. My first thought when I saw the page was, “oooh, raw ice-cream cookies! pretty!!!”

    This is actually the first raw ice-cream cookie recipe I ever saw, and I’ve been into raw vegan food and making my own raw vegan recipes for well over a year now! This is awesome inspiration.

    I’m thinking I could make a basic banana ice cream and stir this into it: http://reallyrawraederle.blogspot.com/2012/01/recipe-berry-bowl.html — And then I could put the banana ice-cream mixed with the ‘berry bowl’ between two cookies.

    I find delicious raw vegan ice cream sandwich in Oregon. They are made by Ratatouille and you can find them in natural food stores and Whole Food.
