Back when I was a dedicated omnivore or vegetarian I could never imagine eating pizza without cheese.  Now I love it.  Getting as many healthy veggies on my plate makes me so much happier.

I have recently fallen in love with yellow zucchini.  The skin is very tender and it adds some nice color to the flatbread.

I used a flatbread mix I had in the pantry, and Trader Joe’s Bruschetta as a base.  You could absolutely use your own bruschetta.  As toppings for the pizza I used the zucchini, garlic flower petals, and dried basil.

I actually liked this pizza more than the one I made with a cheese base a couple days ago.

What are your favorite pizza toppings (they don’t have to be vegan)?

My fave winter pizza was mashed squash/sweet potato, caramelised onions and lots of sage but also love the pesto roasted veggies route. I found this thai-style pizza a little while ago that I really want to try too http://www.eatmedelicious.com/2010/07/thai-chick-un-pizza.html..
