Back when I was a dedicated omnivore or vegetarian I could never imagine eating pizza without cheese. Now I love it. Getting as many healthy veggies on my plate makes me so much happier.
I have recently fallen in love with yellow zucchini. The skin is very tender and it adds some nice color to the flatbread.

I used a flatbread mix I had in the pantry, and Trader Joe’s Bruschetta as a base. You could absolutely use your own bruschetta. As toppings for the pizza I used the zucchini, garlic flower petals, and dried basil.

Recipe: Bruschetta and yellow zucchini flatbread pizza
Ingredients
- Flatbread
- Bruschetta
- Yellow Zucchini
- Garlic Flower
- Dried Basil, chopped
Instructions
- Prepare flatbread
- Cover flatbread with bruschetta
- Top bruschetta with zucchini slices, garlic flower petals and chopped dried basil.
- Bake at 400F for 10-14 minutes

Cooking time: 15 minute(s)

I actually liked this pizza more than the one I made with a cheese base a couple days ago.

Thai style pizza does sound intriguing. And I have considered using sweet potato as a base. There are so many possibilities.
