I just got a look at the forecast here in New Hampshire for the next couple days.  I generally don’t like when the icon shows a cactus, it generally means that the weather will be disagreeable to a cold-lover like me.

You know how everyone signs up for gym memberships in the winter?  I sign up in the summer.  I just don’t take heat and humidity at all.  That’s why I love this treat.

Vegan Raspberry Parfait

It’s just a basic vegan overnight oats, vegan raw raspberry soft serve and rainier cherries.  It’s heavily influenced by the parfaits seen on Oh She Glows.

It’s an incredible and healthy breakfast, lunch, dinner or dessert on those days when you feel like you could melt.  And I live in the countryside.  I can’t imagine how bad it is for the urban dwellers.

Vegan Raspberry Parfait

The layers I used are simple.

  • Buckwheat Groats Basic Vegan Overnight Oats (see below)
  • Raw Vegan Raspberry Soft Serve (see below)
  • Quinoa Puffs
  • Rainier Cherries (my new favorites!)

Vegan Raspberry Parfait

Oh my, one really should only write posts like this while eating the treat.  I’m salivating as I write this.  Why do I not have a parfait in front of me right now.

Recipe: Buckwheat Groats Basic VOO


  • 1/2 cup oats
  • 2 Tbsp chia seed
  • 2 Tbsp dried coconut
  • 1 Tbsp buckwheat groats
  • 1 cup almond milk
  • 1/3 cup water
  • 1 tsp maple syrup


  1. Mix together in a bowl. Place in fridge.
  2. Allow to sit at least 2 hours. Eat alone or use in a parfait.

Preparation time: 5 minute(s)

Cooking time: 2 hour(s)

Diet type: Vegan

Number of servings (yield): 2

Recipe: Raspberry Raw Vegan Soft Serve

  • 1 frozen banana
  • 5-8 frozen raspberries
  • 1 tsp vanilla extract


  1. Place in food processor. Blend until consistency of soft serve occurs. You may have to scrape down the sides several times.

  2. Yum! When I looked at the first few pics I thought I must’ve clicked on Oh She Glows- for real! This looks delicious- I can never get my parfaits to layer like this. I love cherries, so this will be a perfect breakfast or dessert for me.

  4. I also thought I clicked on OhSheGlows!! You did an awesome job layering your parfait!!! I’ve tried as well, and couldn’t do it very well..maybe I’ll try again sometime!! I’ve never used the buckwheat groats or had quinoa puffs…I’ll have to look for them next time I’m in a healthy food grocery store.

  9. Thanks for pointing me to the overnight oats over at Oh She Glows. This type of parfait looks like a nice change from my breakfast smoothie (or my latest thing, vegan yogurt with berries and granola). I”ve been a holdout on the chia, just got my first package of chia seeds this week. This will be a good way to try them out. Oh, and you are right…. Rainier cherries are the best! I think they may be gone now, though, except for the bags of pitted ones in my freezer.
