One of my favorite things about farmers market is the discovery of new fruits and vegetables. Since I read Animal, Vegetable, Miracle I have been very aware of the food monoculture we live in. Carrots must be orange, tomatoes must be red and potatoes may have various colors for their skin but their flesh must be white.
There are so many other foods out there.
Garlic scapes are one of those things you might only occasionally encounter in a grocery store. The farmer I buy them from actually told me that they used to throw them away until customers started to ask for them.

I was at the farmer’s market rather late last week and I got a ton of garlic scapes for a bargain basement closeout price. They just hadn’t sold well that week. So what’s a garlic loving girl to do? I made Pesto.

Pesto on it’s own is a little dull. So I made myself a lovely vegan pizza with pesto as the sauce.

Be aware, garlic scape pesto is amazing and delicious. But the word garlic is very prominent here. Keep mouthwash handy. However, if you have a vampire problem in your neighborhood, eat as much of it as you would like.

I chose to make my pizza on an existing flatbread crust. It was quick, healthy and you could top the pizza with anything you like. I just happened to want tomato on mine.
Another quick recommendation if you want to cut down the garlic flavor a little, is to blend spinach into your pesto as well.

Recipe: Garlic Scape Pizza
Summary: Garlic Lovers Only, this Pesto is wicked garlicky. Keep vampires away.
Ingredients
- Cooked Flatbread pizza crust
- Garlic Scape Pesto (see below)
- Tomato, sliced
- Dried basil, crumbled
Instructions
- Cover crust with pesto
- Place tomato and basil on pesto
- Bake at 375F for 20 minutes (wrap in foil if desired)

Recipe: Garlic Scape Pesto
Summary: An insanely garlic heavy pesto.
Ingredients
- 6 Garlic Scapes
- 1/4 cup pine nuts
- 1 Tbsp sesame seeds
- 1 tbsp nutritional yeast
- 1 tbsp olive oil
Instructions
- Remove ends of the garlic scapes, cut into 2″ pieces.
- Place ingredients in a food processor. Process until pesto consistency. Scrape down from time to time.
Quick notes
Use as dip, pasta sauce, sandwich spread or pizza sauce.
