Just a quick post tonight, I have to share how amazing these vegan tacos are. I can’t get over it. It was a fluke perhaps, and maybe this recipe has been posted plenty of places before, but it was new to me. Last night I was making some black bean vegan tacos and happened to spot some leftover red quinoa in the fridge.
A new favorite meal was born: The Black Bean and Quinoa Vegan taco.
Recipe: Black bean and Quinoa Vegan Taco
- 1 can black beans, drained and rinsed
- 1 to 1 1/2 cups cooked red quinoa
- Taco seasoning, to taste
- Taco shells
- Taco toppings
- Prepare black beans and taco seasoning, add cooked quinoa near the end.
- Scoop into taco shells
- Top with favorite toppings.
Diet type: Vegan
I topped mine with salsa verde and tomatoes from my garden. Vegetarians and omnivores could easily add cheese, but it’s just as good without the cheddar.
