I’ve started looking into Alicia Silverstone’s The Kind Diet a little bit. I have to say, I really admire her. She’s not a celebrity who jumped on a food fad bandwagon just to cash in. She actually believes in her causes and her diet.
The book isn’t just a vegan manifesto either. It’s half recipes. Divided in just vegan recipes and superhero (macrobiotic) recipes there are plenty of interesting foods to try out.
The Kind Diet also has a ton of ingredients I had never heard of before. I actually found the recipes incredibly intimidating, until I realized that most of the ingredients would probably be available in my international foods aisle.
- Shoyu: A type of soy sauce.
- Mirin: A Japanese condiment of the rice wine type with a lower alcohol content than sake.
- Kombu: A Japanese edible kelp also known as dashima
I wanted to try a recipe she had that looked simple enough. A dish with corn and lima beans. I didn’t have some of the ingredients she listed so I put my own spin on things.

Recipe: Edamame Corn Salad
Summary: Adapted from Alicia Sliverstone’s The Kind Diet Summertime Succotash (page 169)
Ingredients
- 1/2 whole red onion, diced
- 1 teaspoon olive oil
- 1 clove garlic, minced
- 2 8-ounce packages edamame, thawed
- 1 can corn kernels
- 1 cup cherry tomatoes, halved
- 2 tablespoon fresh basil, chopped
- 1 tablespoon balsamic vinegar
- 1/2 teaspoon salt
- 1 teaspoon lime juice
Instructions
- In a skillet heat olive oil. Simmer onion until it begins to brown. Add garlic, simmer for about a minute.
- Add edamame and corn, simmer for about 5 minutes.
- Remove from heat, add tomatoes and basil. Stir well.
- Add salt balsamic vinegar, salt and lime juice.
Preparation time: 15 minute(s)
Cooking time: 10 minute(s)

The Kind Diet is actually the book that tipped me towards going completely vegan. I was a vegetarian for 18 years when I read it. Alicia’s writing approach was so friendly, and I agree with her overall philosophy. Her web site is good, too, if you haven’t seen it. A nice community.

There’s a corn/edamame salad in The Veganomicon that I make aalll the time, such a good combo! I hear good things about The Kind Diet–probably worth purchasing, huh?

I make the Veganomicon edamame corn salad frequently too! The flavor of the edmame and corn are highly compatible and it’s very filling
I still haven’t checked out Alicia’s book but it’s been on my list.

I own veganomicon, yet I have not cracked it open yet. I really should, it sounds like everyone likes it as a resource.
