Today’s post is rather quick.  It’s not a recipe so much as an idea.  Have you ever seen pattypan squash (also known as UFO squash)?  We have them at our local farmers market.  They are a form of summer squash and have a similar flavor.

I decided to treat them like I would peppers and stuff them full of rice.

You of course could be creative and use pilaf, quinoa, wild rice, etc.

I just wanted rice in my belly and the squash was how I was going to get there.

The squash aren’t hollow, you will have to carefully scoop out the seeds.  Think of a tiny, thin skinned pumpkin.

Prepare your rice or grains, or use leftovers from the night before. Stuff away the tiny squashes.

Bake at about 375 until the squash starts to soften.

The squash flesh is sweet and tender, as is the totally edible squash skin.  It’s a nice compliment to a flavored rice.

It just adds some variety to the stuffed veggies you serve yourself and your family.  For the set omnivores in your life, sprinkle some cheese on top.  Or claim that it’s dirty rice.
