I recently discovered that the Irish have a traditional dish made of potato and kale. The dish is called Colcannon.  What I made looks a little more like a hash than what wikipedia shows.

IMGP7978 I was going to share this recipe yesterday, but I ran out of time before having to head out to our friend’s surprise 30th birthday party.

Unfortunately he ruined the surprise by coming home an hour early.  It was still a great party though.  The 30 year old men played Lego with a 3 year old and a couple 8 year olds.

IMGP7990Hubby made a vehicle with every set of wheels he could find.  The 3 year old thought that it was the coolest thing that anyone made because it had so many wheels.

IMGP7992 The three year old was disappointed by the gift opening.  He was so excited about the birthday boy opening a really big gift.  When the gift ended up being a motorcycle part, I thought he was going to cry.

The birthday boy liked the gift as much as if it had been an awesome toy.

On to the recipe: I had this hash for breakfast.  But there’s no reason it couldn’t be a side for a St. Patrick’s day meal.

IMGP7979 What isn’t more stereotypically Irish than potatoes and green things.  Both a foods available during the late autumn and possibly winter.

Kale and Potato Hash

Prep Time: 20 minutes

Ingredients

  • 1 bunch dinosaur kale, torn into bite size pieces, stems discarded
  • 3 potatoes
  • 2 garlic, minced
  • 3 green onions sliced
  • 1 teaspoon salt
  • 1 teaspoon onion powder

Instructions

Place kale in a microwavable dish with some water. Cover. Microwave on high for 3 minutes

Boil potatoes until they are can be slightly pierced with a fork. Cool off.

Shred potatoes

Mix potato with kale, salt, garlic, green onion, and onion powder.

Heat olive oil in a skillet. Press potato mixture to the skillet. Cook potato mixture turning over frequently.

    I don’t think I’ve had authentic colcannon but I like the idea of making mashed potatoes more nutritious with kale. I agree, this would be a nice addition to a St Patrick’s Day menu!
