I recently discovered that the Irish have a traditional dish made of potato and kale. The dish is called Colcannon. What I made looks a little more like a hash than what wikipedia shows.
Unfortunately he ruined the surprise by coming home an hour early. It was still a great party though. The 30 year old men played Lego with a 3 year old and a couple 8 year olds.
The three year old was disappointed by the gift opening. He was so excited about the birthday boy opening a really big gift. When the gift ended up being a motorcycle part, I thought he was going to cry.
The birthday boy liked the gift as much as if it had been an awesome toy.
On to the recipe: I had this hash for breakfast. But there’s no reason it couldn’t be a side for a St. Patrick’s day meal.
Kale and Potato Hash
Prep Time: 20 minutes

- 1 bunch dinosaur kale, torn into bite size pieces, stems discarded
- 3 potatoes
- 2 garlic, minced
- 3 green onions sliced
- 1 teaspoon salt
- 1 teaspoon onion powder
Place kale in a microwavable dish with some water. Cover. Microwave on high for 3 minutes
Boil potatoes until they are can be slightly pierced with a fork. Cool off.
Mix potato with kale, salt, garlic, green onion, and onion powder.
Heat olive oil in a skillet. Press potato mixture to the skillet. Cook potato mixture turning over frequently.
