McDonald’s Shamrock shake is a bit of a tradition for me. It’s sad but true. I remember back in the day when not all stores in the chain would have them. We would sometimes drive around on the rumor that a specific location had it. I had one recently, but while it was delicious, the ethics behind it didn’t make me feel great. So I made one at home. And I have a few other variations I want to try. That’s why I numbered this recipe #1, there will be at least one more.
By the way, the very bright green comes from 8 drops of green food coloring. It would be easy to make it a more minty green by adding less green and a little yellow. But it matches my non-vegan cookies.
Vegan Shamrock Shake #1
Prep Time: 5 minutes
Ingredients (1 shake)
- 1 cup vanilla soy ice cream
- 1 cup almond/coconut milk
- 1/8 to 1/4 teaspoon mint extract
- 8 drops green food coloring
- soy-based whipped cream for topping
Place ingredients in a blender. Blend until smooth. Quick and easy.
