This is the healthiest way I can think of to make a vegan shamrock shake. Because I can’t eat banana (but did do a tiny try) I can’t drink it. Hubby took a look at the color and said no thank you. So hopefully some of you will try it.
The key, frozen banana. I slice up overripe bananas and throw them in my freezer. For the color I used spinach and a couple drops of food coloring. I tried to counteract the banana flavor with some vanilla, but it may have just been overkill.
Just because I can’t drink it doesn’t mean I can’t post it. But I really do need you my readers to try it and let me know how it it. The taste I had had the banana and mint flavors competing a little, but it was overall mostly minty. I think my recommendation (and a little less healthy) would be to use half the banana and 1/2 cup of vegan “ice cream”.
I mean, right now it’s pretty much a mint flavored smoothie (not that it sounds bad). I bet fresh mint would be awesome in this mix too.
Vegan Shamrock Shake no. 3
Prep Time: 5 minutes

Ingredients (1 large smoothie)
- 1 heaping cup frozen banana slices
- 1 cup non-dairy milk
- 6 big leaves of spinach
- 2 drops green food coloring
- 1/4 teaspoon vanilla extract
- 1/4+1/8 teaspoons mint extract
Instructions
Place in blender, blend away
So if you give it a shot, let me know what you had to adjust to make this perfect. I mean, someday when I get over this banana thing, I want to make one of these sugar-free healthy vegan shakes.



















Gotta admit, mint + banana? Can’t say it’s a combination that’s calling my name. I do love banana-smoothie-drinks though (had one this morning)–hope you and bananas can reconcile and come to an edible agreement some day.

Well I do love the mint banana strawberry soft serve I made last summer. It was such a favorite. I really wish I could try this one properly. But then again, I’m not complaining about how #1 and #2 turned out.

If you try it, let me know. Frozen bananas really do make for great ice cream substitutes, especially in flavor combinations were a little bit of banana flavor left over is actually ok.
