Tuesday night, as I packed for my flight I had a great dinner idea. I had some leftover mashed potato and some broccoli that I couldn’t wait to eat from the farmer’s market. I used to loved to get the broccoli and cheese baked potato when I was a kid, so I was inspired to make a somewhat random dish.
So random in fact, that I’m not sure what to call it. A taco? A Burrito? A Wrap? Either way, it worked out better than my wildest dreams.
I probably should have taken pictures with a better light source or a tripod though. Oh well, a recipe that I will need to repeat just to get new pictures (and because it was delicious).
- Wrap
- Mashed potatoes (mine were made with earth balance and garlic)
- Sauteed Broccoli
- Cheese or cheese substitute (like daiya, teese or a cashew cheeze sauce)
- Green onions
The instructions are even simpler. Layer ingredients together in the proportions you enjoy, eat warm.
I clearly was heavy on the broccoli. It’s one of my favorite foods.
While I used organic dairy cheese, I beg you to try it with daiya, teese or without cheese at all. I think the dish is a perfect example of how veggies can hold their own in a dish. I found myself wishing I had omitted the cheese when I realized I didn’t have any thawed out non-dairy.

A Burraco, perhaps? And I love broccoli, even if mashed potatoes aren””t my fave, so I””m sure this would be up my alley. Especially if topped with some hot sauce…
I love broccoli and cheese, and I think that I””d be willing to try it, if I didn””t know that there were potato””s in it. I””m weird picky that way. I””m nearly sure my kids who love all of the ingredients wouldn””t even attempt to eat it. but its a thought, and you know, It””s probably pretty good.
